I layer a tortilla, shredded cheese, the rice and beans, lettuce, and top it off with my Mom's ranch dressing. Then, I wrap them up and make rice and bean burritos out of them!
Prep Time: 5 Minutes
Cook Time: 25 Minutes
Ready In: 30 Minutes
Yields: 6 servings
INGREDIENTS:
1 teaspoon olive oil
1 onion, chopped
2 cloves garlic, minced
3/4 cup uncooked white rice
1 1/2 cups low sodium, chicken broth
1 teaspoon ground cumin
1/8 teaspoon cayenne pepper
3 1/2 cups canned black beans, drained
- In a stockpot over medium-high heat, heat the oil. Add the onion and garlic and saute for 4 minutes. Add the rice and saute for 2 minutes.
- Add the vegetable broth, bring to a boil, cover and lower the heat and cook for 20 minutes. Add the spices and black beans.

Some members of my family have tender mouths. You may want to cut back on the cayenne pepper if that's the case at your house too.

Just had to say I made this again tonight Cheree because it is SO fast and easy, inexpensive and most of all, we freaking LOVE it! Added some smoked paprika and chipotle chile pepper and served with cilantro--thanks for another great recipe sis!! Love Ya!
