We frequently have breakfast foods for dinner. This is one of our favorites.
1 large baking potato
2 tablespoons vegetable oil, such as safflower
1 pound sausage
1 onion, chopped
DIRECTIONS
- Peel potato; cut into 1/2-inch dice. In a large frying pan, heat oil over medium heat. Add potato; cook, stirring occasionally, until golden brown, about 6 minutes.
- Add sausage and onion; cook, breaking up meat with a spoon, until beef is thoroughly browned, about 4 minutes.
